Making Wholesome Wholegrain Bread
I make 4 loaves in 2 hours, and I am usually doing other tasks at the same time! I put 10 cups of hard winter wheat berries into my NutriMill Grain Mill, and grind on a medium speed at almost the coarsest setting (my preference). As that is grinding (about 2 minutes) I get 5 cups of hot tap water and put into my Bosch machine with dough hooks (comes with the machine above). By then the flour is ready and I put 5 cups of the newly ground flour in the Bosch. I add 1/2 oil, and in the same measure so as not to stick, I add 1/2 cup of local honey. Then 3 Tbls SAF yeast, 3 Tbls Dough Enhancer, 3 Tbls Vial Wheat Gluten (these previous two ingredients are optional) , 2 Tbls. Sun dried Sea Salt. I mix on low for 30 seconds then let it "sponge" for about 15 minutes (set your timer!). I'm off doing other things. Now back to the bread dough, add 4 more cups of the newly ground flour, then add more until the bottom inside of bowl shows and dough is pulling from the sides. It should be a bit sticky. I put the lid on to keep heat in and mix on low for 8 minutes, set the timer, I'm off again...Now back, oil the counter or a board, and oil your bread pans, I love the L'Equip Flexi form 9 3/4 Loaf pans. ( You don't have to oil them after the first time everytime, but I like to), now turn your loaf onto the oiled board, flop the dough around so you feel like you've kneaded it yourself, then let set for about 30 minutes or until doubled. Timer, I'm off...Timer, I'm back. Now punch dough down, split into 4 even pieces and put into bread pans. Preheat oven to 350F. When bread doubles in size on counter, bake for 30 minutes, switching racks in between as needed. After your bread is done, let sit for about 5 minutes before dumping out of pan. Have lots of butter and jelly around and hide a couple loaves for later in the week. This bread freezes well, but is best to cut it first. My time involved in this 2 hours, maybe 15 minutes. I make bread weekly, it's enough to feed our family, I've not cost figured it out, but am told it to be about $.75 a loaf. Much more nutritious than store bought preserved breads.
